Berry Salad with Whipped Feta and Champagne Vinaigrette

6 Oz. Spring Mix Lettuce
6 Oz. Fresh Blackberries
1/2 C. Fresh Sliced Strawberries
1/2 C. Fresh Blue Berries
1/2 C. Cinnamon Pecans (recipe below)
Whipped Feta (recipe below)
Champagne Vinaigrette (recipe below)
- To plate, layer mixed greens, berries and pecans. Spoon 3-4 dollops of whipped feta onto the plate. 
- Top with cinnamon pecans and vinaigrette. 
Cinnamon Pecans Recipe:
1 Lb. Pecan Halves
1 Egg White
1 T. Water
1 1/2 t. Cinnamon
1/2 t. Salt
1 C. Sugar
- Mix egg white and water with a fork until frothy. Stir in pecans until well coated. 
- In a separate bowl, mix cinnamon, sugar, and salt. Add cinnamon mix to pecans. Stir. 
- Line a cookie sheet with parchment paper. Place pecans in a single layer on parchment paper. 
- Bake at 250 degrees for 30 minutes. Remove pecans from oven, stir then return to the oven for an additional 30 minutes. 
Whipped Feta Recipe:
6 Oz. Feta (block)
2 Oz. Cream Cheese (room temperature)
1/3 C. Olive Oil
2 T. Fresh Squeezed Lemon Juice
2 T. Minced Shallots
2 t. Minced Garlic
- Crumble feta, then place feta and cream cheese in food processor. Pulse until the cheeses are mixed. 
- Add olive oil, lemon juice, minced shallots and minced garlic. Process until smooth. Place into a storage container. Cover and refrigerate for 2-3 hours or until firm. 
Champagne Vinaigrette Recipe:
1/2 C. Champagne Vinegar
1/2 C. Apple Juice
2/3 C. Canola Oil
1 t. Garlic Salt
1/2 t. Black Pepper
2 t. Sugar
- Combine all ingredients above in a salad dressing bottle and shake vigorously. Refrigerate for 1 hour and shake again.
